Flatout Flatbread Recipe and Giveaway!

I’m always trying to find quick and simple things to make that taste good and fit within my PointsPlus values on Weight Watchers. Lunch seems to be one of the hardest meals for me to plan — I want something I can make quickly and doesn’t take too much effort. When the nice folks over at Flatout Bread contacted me about creating a recipe and hosting a giveaway as part of the #FlatoutLove promotion through Walmart, I decided to give it a try!

Now, Flatout Breads are like a super food in my weight-watching world. So many of my weight loss peers and Hungry Girl fans around me swore by them, but when I bought them a couple years ago for the first time I had no clue what to make. I ended up throwing some dry lettuce in a plain wrap with some random cheese from the fridge — no wonder why I wasn’t blown away! When Flatout Bread approached me to write my own recipe, I took the time to think about what I would want in a quick, simple wrap that was full of flavor and fit within my healthy guidelines. Needless to say the results were much different — and tastier!

If you’ve followed Hungry Girl or been on Weight Watchers, you know the overall message is about enjoying what you eat within moderation and making some adjustments to every day ingredients in order to fit your healthy eating plan. Flatout Flatbreads come in a variety of options (and flavors!) and is a great alternative to bread (which can really elevate the Points Plus values of any meal if you’re not careful) – they’re low in calories, fat and carbohydrates, while providing an ample amount of fiber and even protein – perfect when you want something healthy and filling.

Another thing I like about Flatout Flatbreads is they are readily available at Walmart – eating healthy doesn’t mean you have to go out of your way to shop at specialty stores or go outside a food budget. The variety of options available means you can pick up a few flavors to use throughout the week to keep your menu exciting – you’re likely to stick to healthy eating if you actually like what you’re making! Now that I am completing my #bikinicountdownchallenge 100 miles in January, I know I need something quick and filling for lunch – I am usually starved and want to fill up without feeling too heavy after eating. Some of my favorite ingredients are found in a Greek salad – I decided to switch it up and transform it into a delicious wrap lunch! This recipe has plenty of vegetables to help check off some of those Weight Watcher’s Healthy Guidelines (and Simply Filling), while still tasting amazing. Another bonus? It fits perfectly in with Meatless Monday or the upcoming Lenten season!

Bikini Countdown Greek Wrap

Bikini Countdown’s Greek Wrap — 6 PointsPlus

1 Flatout Flatbread (light original)
2 tbsp. hummus
small handful of Spring greens
1 tsp. olive oil
1 tsp. balsamic vinegar
2 artichoke hearts — coarsely chopped
3 Kalamata olives — finely chopped
1 Pepperoncini – sliced

Spread hummus over the entire surface of the flatbread. In a small bowl, drizzle spring greens with olive oil and vinegar, then toss by hand and add to one end of the flatbread. Layer artichoke hearts, kalamata olives and pepperoncini over the spring greens. Fold tightly over the vegetables, roll all the way to the opposite edge and cut! 

This wrap has all the flavors I crave — juicy artichokes and olives, a bit of spice with pepperoncini and creaminess from the hummus! Add a piece of fruit to the meal and you have a filling, healthy lunch.

  1. This looks so amazing!
    Lately I have been making a light salami sandwich, I use the 55 calorie Sara Lee bread, light mayo, light salami,and low fat provolone. I have never known what to put on the flatbread either! I’m anxious to try it now!!

  2. I usually make a wrap with turkey or chicken breast that’s been thinly sliced and one slice of cheese and top that with either mustard or horseradish sauce.

  3. I #FlatOutLove Turkey, Feta cheese, Cucumber, Avocado, Lettuce, tomato, and Light Ranch dressing on a Flat Out Wrap.

  4. I eat lunch at my desk, so I prefer something that won’t make a mess. I usually eat a sandwich, though the messier options are more tempting!!!
