As I’ve mentioned, I am doing the Skinny Snowman Challenge and one of the ways to earn a good amount of points is to go meatless on Monday. This concept is part of the larger campaign, Meatless Monday, which is getting a larger and larger following as the months go by. I have an little problem with meat — it really grosses me out. There’s some irony though, I eat plenty of fast food with meat and for some reason I am not bothered by it — which is really stupid, considering it’s probably the least appetizing parts of the cow or chicken.
I especially have trouble eating meat when I am at home. I have cut out most beef and stick mostly to chicken, but even then I sometimes get so nauseated at the thought of eating muscle I just stop eating it. I don’t know if it’s the cooking part that really messes with my head — handling raw meat is probably the issue I have the most trouble dealing with because it’s just disgusting. Anyway.
Today, I was reading my November/December issue of Weight Watchers Magazine and came across a great recipe for Meatless Monday. While this recipe has shredded turkey in it, you can easily omit that ingredient for a tasty, meat-free meal. Find it on page 84 of your issue, or check it out here:
Cold Sesame Noodles
In a bowl, mix:
1/2 tbsp soy sauce
1/2 tbsp lemon juice
1 tsp honey
1/2 tsp Asian sesame oil (dark)
Add the ingredients to a second bowl, which contains 1/2 cup cold cooked spaghetti, 1/3 cup sliced bell pepper, 1 tbsp cilantro and toss together so the spaghetti is coated with the sauce.
